What is it?

Carob is a slow-growing evergreen tree that grows endemically in the Eastern Mediterranean. It is a legume—a member of the pea family—that grows well in a dry environment, typically, in the same area where citrus is grown. This tree bears fruits in the form of long, leathery reddish-brown pods. Inside the pods, you will find tiny, inedible seeds.
