What is it?

Carob is a slow-growing evergreen tree that grows endemically in the Eastern Mediterranean. It is a legume—a member of the pea family—that grows well in a dry environment, typically, in the same area where citrus is grown. This tree bears fruits in the form of long, leathery reddish-brown pods. Inside the pods, you will find tiny, inedible seeds. These seeds have a reliably consistent size and weight which jewellers use to measure diamonds and gold. In fact, the word carat is derived from the Arabic name for carob seeds. Now, the brown pulp of the carob—or “St. John’s Bread,” “Black Gold” and “Locust” as it is sometimes called—is something else. The pulp is not merely edible; it is deliciously sweet. For more than 5,000 years—carob is known to be one of the plants that have survived the last ice age—this fruit has been utilised in ancient Greece and Egypt as an important food source. It has also been used as a remedy for diarrhoea and other ailments. In the 19th century, carob pods were sold by British chemists to singers. Chewing carob pod husks is believed to soothe and clear their throat and vocal chords.
