What is it?

Also called yacon strawberry, diet potato and yacon potato, this perennial tuber has a look similar to a potato and a taste akin to pear, apple, watermelon and celery all at once. It is juicy, with a texture that can be compared to water chestnuts. There are several varieties of yacon—red, purple, pink, orange, red, white and yellow the most common of which is white. A native of South America, Central and Northern Andes, yacon belongs to the same family as sunflowers, Jerusalem artichokes and dahlias. Yacon root has been grown for thousands of years because there is evidence of its existence preceding the Incas. They used it as a water source when they travel. Its cultivation appeared to have started recently—about a few decades ago. Today, it is already well-established in Japan, South Korea, the Czech Republic and other countries. It is also grown in smaller scales in Europe, but it still continues to grow in the wild in certain parts of the Andes.

What are its nutritional content and health benefits?

While yacon isn’t as nutrient-rich as other vegetables and fruits out there, it does offer several important yacon health benefits.

Controls diabetes. A number of research shows the inulin (a type of fructose) contained in yacon roots are helpful in controlling the blood sugar levels of those with Type II diabetes. Aside from having positive effects on hepatic insulin sensitivity in diabetics, yacon is also a great substitute sweetener. That’s because yacon contains fructooligosaccharides which can’t be digested by the body—thus, excess sugar is prevented from entering the bloodstream.

Aids weight loss. Studies show obese people who consumed at least .14 grams per kilogram of body weight of yacon syrup each day for 120 days helped reduce their weight. The same fructooligosaccharides in yacon is responsible for suppressing appetite, increasing defecation and making one feel satiated after eating. It’s the reason why yacon is called “diet potato.”

Reduces bad cholesterol. Daily consumption of yacon helps reduce low density lipoprotein (LDL) or the bad cholesterol and fasting triglyceride which, when left unchecked and untreated, could lead to heart disease.
