What is it?

When ripe, apricots have a golden-orange color like a sunset in the summer. They have a mild, sweet taste with a hint of tartness—similar to plums—and a velvety surface. This stone fruit is actually a drupe with a single pit located at the centre of its crunchy flesh.

Apricots, which have an Asian origin, grow on small deciduous trees that thrive in well-drained, sloping soils. During the springtime, apricot trees produce beautiful white-pink flowers. Close relatives of apricots include nectarines, plums, and peaches.

Apricots have a long history dating back about 4,000 years to the mountain slopes of China, where it was an important food crop. It was a well-known fruit in Greece as far back as 60BC, where it was referred to as “golden eggs of the sun”. The Greeks brought apricots to Armenia, the Mediterranean and Europe, but it was Spanish explorers who brought them to the US in the 1700s.

Today, there are many countries aside from China, Spain, and Greece that commercially produce apricots. These include New Zealand, South America, Turkey, France, Russia, USA, Italy, Syria, and Iran.
